Night before my son is meant to be going on a hike with his class I find out he needs cookies or Crackers and a hot drink with him!
Like most mums, we find out these things… The night before!
And do I have cookies or Crackers in the house… Nope! 🍪😒
But have no fear, I am sharing with you today my favourite quick and easy (egg free) raisin Oat cookie recipe.
Ingredients
Recipe makes 10 small cookies. Bake at 175 degrees for 20 mins.
- 2 dl flour
- 2 dl porridge oats
- 2 dl raisins
- 2 ts cinnamon
- 0.5 dl brown sugar
- 1.5 ts baking powder
- 1 ts vanilla
- And a pinch of salt.
Dry ingredients are mixed together in a mixing bowl, then add…
- 100g melted butter
- 0.5 dl water
Mix well.
Then make small balls, place them on the prepared baking tray, and flatten them slightly.
Now bake for 20 minutes. They should be crunchy on the outside and a little soft in the middle.
Take the cookies out and let them cool on a drying rack.
Once they’ve cooled, enjoy on hikes or just snuggled up on the sofa with a glass of milk.
